Just Curedô Smoked Salmon Frittata with Goat Cheese and Leeks
Ingredients:
- 1 medium leek, well cleaned and thinly sliced
- 4 T extra virgin olive oil
- 10 large eggs
- 1 cup heavy cream
- 6 oz Just Curedô Smoked Salmon, cut into medium dice
- 5 oz chevre or other soft goat cheese, crumbled
- 1 T kosher salt
- Ω t freshly ground black pepper
- 2 T minced chives
Method:
Preheat oven to 350F.
In a 9 inch cast iron or other heavy, ovenproof skillet, heat 1 T oil over low heat. Add leeks and cook until soft but not colored. Remove leeks from the pan and set aside to cool a bit. Wipe pan clean for reuse.
Whisk eggs and cream together in a large bowl. Add salmon, goat cheese, leeks, salt, pepper and chives. Stir to combine.
Heat remaining 3T oil in skillet over high heat until oil is smoking. Pour egg mixture into hot pan. Place pan in oven and bake until the frittata is set in the center, 30 to 35 minutes.
Remove from oven. Invert pan onto a platter. To serve warm, let frittata cool for 5 to 10 minutes. To serve at room temperature, allow to cool completely.
Cut into slices and serve with a green salad.
