Half Smoked Salmon

Very lightly smoked salmon as a component in warm, savory dishes has been popular in Europe and in fine dining restaurants for years. Just Cured’s Half Smoked Salmon makes it easy to serve at home the kind of dishes served in some of the best restaurants in the world.

We start with the same salt and bourbon cured salmon that we use for our smoked salmon. Then, rather than a full smoke, we smoke the salmon over natural oak smoke for a very short time. The smoke flavor in the salmon is quite subtle.

After the “half smoke,” we hand trim and cut the salmon into individual filets of approximately 5 ounces and vacuum package two filets to a pouch.

We developed our half smoked salmon to be served warm. Cook the filets for about 7 minutes using your favorite method — grill, bake in a 400∞F oven, sautÈ over medium high heat, or poach in barely simmering liquid. The look of medium rare in the middle is the target; our full cure means you can readily eat the Half Smoked Salmon without additional cooking.
